Kaastangels / Käsestangen


The Dutch call it Kaastangels.. the Germans call it Käsestangen - direct translation wud be cheese sticks... i spent a good 3hrs doing this cookie.. the smell of cheese coming out of my kitchen was like as tho i was running a cheese fondue restaurant lol.. so Cheesy.. yummehhh...




Ingredients
400g unsalted butter (i used Anchor)
100g Wisjman butter
300g Edam cheese, grated
100g parmesan cheese, grated (if u r not into parmesan u can replace with Edam.. thats what i did)
800g flour

Topping
2 egg yolks mix with 1 tbsp cookie glaze
180g of grated cheddar cheese


Method
Preheat oven 125C
Mix grated Edam cheese and grated parmesan and set aside.
In a mixing bowl, whisk butter and wisjman on low speed for abt 5 mins or till blended and light...
Add cheese in 3 additions, mix well.
Add flour in a few additions
Roll ur dough and press it with kaastangels cutter.. if u dont hv any.. u can always use any kinda cookie cutter
Brush surface with egg yolk mixture, sprinkle with grated cheddar cheese.
Bake for 20mins.



Ok i hv to go .. Mom just called.. she wants me to take her out for shopping.. Eid's coming and to shop for new stuff is moms fav time of the year hahaha.. enjoy the recipe and have a good weekend dearies!

Whoa! 2 updates in a day. Dah terubat rindu kat yr blog K. Rima. I don't think I can bake this, banyak pulak cobaan with that cheese smell. All of us memang hantu cheese.

Kalau tak kerana mac sheet, dont think I persevered sampai the 8th attempt (French method) yg macs nyer perfect (SIL setuju atau pun dia dah tak tahan jadi tester).
Did the Itallian method semalam.Mak oi macaron tembam macam burger. Suka sangat2.

menggiurkan sungguh biskut tu. spending 3 hours buat cookies? aduhai.. mau pengsan i dibuatnya kalau i spend that much time buat cookies. i think lepas tu, i terus surrender, tak buat cookies lagi dah.

semlm i was thinking of nak buat biskut raya. but bila pikir nak kena gentel, or picit or terap, terus rasa nak demam. i salute those yg sabar dan tekun buat cookies :)

Kat KL ada Edam Cheese. Cuba try gi ke Cold Storage, TMC or Jusco. Edam cheese tu ada mcm red wax. I dulu selalu beli tp tak pasti samada supermarket tu masih wujud ke tidak. Cari benda2 mcm ni kat Bangsar, sbb kawasan expat.

Hari tu Rima baked it lepas midnight.. tu yg melarat sampai dekat pukul tiga pagi baru habis dah tu every tray keluar oven sure satu biji masuk mulut.. cannot resist.. so cheesy!

Its different cos femmy cheese cookies tu pakai sugar icing and the top tu crispy gitu where as this cookie waktu keluar oven the cheese topping tu crispy but after dah sejuk and masuk botol dia tak krap krup but instead rasa keju yg amat.. melekat kat mulut one hehe

Why do u think this year i surrender tak leh take cookies order... memang makan masa and super boring.. i mean bake kek lapis also makan masa but tak boring cos all u need to do is to keep on bukak and tutup oven every 7 mins.. if cookies ni u hv to duduk diam diam and gentel hehe

Every single year pun cam gitu.. fm cookies to cakes semua ditanggung beras .. i will only bake for my own household lepas raya sebelum open hse cos rumah kita orang datang kemudian..

KSal u can use any good brand butter... i used wisjman butter cos i memang bought bertin tin waktu gi jkt.. if dulu i can recommend golden churn but with lots of stuff going on .. kita nak pakai pun ade rasa was was so maybe u can use 500g of scs butter?

A very tempting recipe..my son loves cheese, so this would be a treat for him. Cuma not sure if ada edam cheese in Brunei..boleh ganti cheese lain ke?

Btw, I read ur comment abt the golden churn, just to share, di brunei Golden Churn butter disahkan halal. The authorities tested the butter twice, 1st test came out ok,no pig DNA, But due to unsettling news from neighbouring country, Brunei authorities did another test, This time conducted on 17 samples, taken from various locations including from the neighbouring country. Alhamdulillah, test came out sama, no pig DNA. Hence disahkan halal oleh Brunei authorities and selamat digunakan untuk umat Islam di NBD.

I lagi very the binggung.. kat s'pore pun halal but i received far too many emails regarding golden churn sampai kan tahun ni nak pakai buat raya bakes tak menjadi kenyataan.. my steamed fruit cake and kek lapis tahun di semua pakai scs mix with wisjman butter.. nak di buat aper.. wisjman butter tu actually for my own use but i need some kinda super creamy butter in my bakes tu lah i korban my wisjman butter.. nampak gaya the next time hb goes to jkt i will ask him to bring back boxes of that butter hehe

You can use all cheddar if u like.. in sg ade jual old cheddar cheese.. i used that to replace edam but for this recipe i guna kan edam cheese that i bought kat jkt..

Its a brand name.. macam scs.. macam anchor.. macam golden churn.. wisjman butter ni memang very creamy and wangi and not cheap either.. i hv not seen it here not in malaysia..

This recipe uses 400g of unsalted butter and 100g of wisjman butter.. u can always use 500g of butter of ur choice if u dont hv wisjman butter..
