Yep yep thats what my little Sonia has been calling this pandan layer cake.. shes so so funny.. shes so into green these couple of weeks.. the moment she saw me slicing this cake.. she said to me with a wide eyes..." uuuhhhhh mamaaaaa... greennn... Ben 10 cakeeeeeeee!!" .. hahaha






I love green.. i remembered very well the time i decorated my whole house with shades of baby green and pink.. eventho it was more than a decade ago.. i cud still remember it very well.. i was so so into english country that my house was featured in one of the top home magazines here.. Home Sweet Home (HSH) to be exact.. that was the proudest moment of my life! not cos i felt proud of the things i had in my home.. its more abt what i had achieved in my skills of home decorating... most of my nick nacks i got fm the US.. ohhh how i miss hunting for it during my several trips to the US ..


For some reason my old home was chosen and let me tell u one thing.. it wasnt easy cos it took them the whole day doing it.. taking photos and all that.. for me i didnt really care eventho my house was full of strangers.. i was too busy baking cookies for them and entertaining the editor and the rest of his crew.. it was good fun.. i love english country and my passion for it has never changed eventho right now our house is based on simple colonial style.. hb is not a big fan of english country and anything that is associated with flowers is a no no.... he doesnt like anything cluttered and even our bedsheets dont hv any flowery motif.. bedsheet has to be simple and has to be white with bold coloured borders.. threadcount has to be 800 and abv.. hehhe.. thats how fussy he is when it comes to bedsheets!





Anyhow better not complaint too much.. i love the way i decorate my home now eventho its not english country .. i still get to live in a house that is so easy to maintain compared to bef where i had to dust all the nick nacks every single day. I go to the nursery every weekend to get fresh flowers..ohhh i love fresh flowers alot.. not a big fan of roses .. i do love lilies tho.. i love all things green and white and pink..

So ok lets move on to this layer cake.. eeek i didnt realise i hv been blaberring abt house decorating in my food blog hahahha... i baked it last night bef we went to visit mom and nyai.. i gave mom and lyn 3/4 of the cake.. i kept 1/4 for my photo shoot and only tasted it this morning.. if u wanna know how it tastes like.. imagine eating pandan butter cake hahahha.. i loikeeee!


Ingredients
(A)
450g butter - I used golden churn
200g caster sugar
21 egg yolks
4 tbsp condensed milk

(B)
160g caster sugar
10 egg whites
1/2 tsp cream of tartar

(C)
270g Hong Kong flour
4 tbsp coconut milk powder (KARA)
1/2 tsp baking powder

(D)
2 tsp green colouring - I used powder type for making macarons
2 tsp pandan paste or emulco






Method
1. Using a stand mixer.. whisk butter, sugar and condense milk till fluffy.. add egg yolks one at a time and continue to whisk till well combined.. set aside
2. In another bowl.. whisk egg white and cream of tartar till bubbly.. add in sugar a little at a time and continue to whisk on high speed till it turns soft/hard peak.
3. Sieve ingredients C and add to ingredients A - (i used mixer to mix it using low speed).. Once mix.. fold in egg white mixture
4. Weigh and divide batter into two equal part.. one part add in pandan paste and green colour.. the other remain plain.
5. Greased 8x8 cake pan and start ur journey of baking 26 layers of batter.. standing and checking and looking at ur cake till u bake ur last layer hahahha
6. Temp that i am using is 175C.. each layer weigh 76g.. grill (upper fire) each layer for 5 mins.. dont forget to spread melted butter on every layer and also bake last layer using upper and lower fire for 15 mins (7 mins into baking cover ur pan with aluminium foil so as to avoid ur cake turns too dark)






So thats it peeps.. I really hv to go cos i need to get some things ready bef our dinner appt.. tonight i will hv to stay up a little longer cos i wanna bake congo bars for my kaki's in concorde hotel..

A quick entry.. cant stay long cos i am off to run some errands.. made this steamed cake last night for my Nyai and honestly i cant comment anything abt this cake cos i didnt even hv a slice.. I had planned to bake her pandan chiffon but unfortunately i ran out of coconut milk.. so had to settle with this one.. glad i made it cos its as simple as ABC.




Hope u like it Nyai..i know this cake is not that sweet cos i ate a little of the crumbs heheheh

Ingredients
(A)
8 eggs
250g sugar
1 tbsp emulsifier
1/2 tsp salt

(B)
250g flour
50g milk powder

(C)
50g butter, melted
50g fresh milk

(D)
75g margarine, melted - I used butter
2 tbsp instant coffee mix with a little hot water
1 tbsp mocca paste - I used mocca latte paste


Method
Heat steamer.. greased a 24cm round pan.
Beat ingredients A until thick and fluffy.
Add in sifted B.
Mix well. Weigh and divide batter into two equal part.
Add C to one part, mix well, set aside.
Add D to another part, mix well, set aside.
Pour plain and mocca batter alternately till finish
Steam on medium high fire for abt an hr or till set
Remove fm pan, slice into pieces. Serve.

Two nights ago.. right after dinner we went out to hunt for durian.. we of cos ended up in Geylang area where one durian can easily cost us $40.. anyway long story short.. upon reaching there... the only kind they had was either the most expensive.. which is $38 per kg.. or $15 each.. so typical me who doesnt understand why someone wud wanna pay so much on durian (aka that someone is my super duper hb).. i told hb that we shud just take the $15 each and get 2 durians instead so that way i can take home if there is any leftover..

Our durians came short of our expectation.. it has nothing got to do with the sweetness.. its just that its not that "rich"?.. it tasted so much different than the one that we usually wud pay for.. i ended up taking home one of the durian and kept it in my freezer..





This morning when hb showed me the tuk tuk that he had fixed for Sonia.. (dont know why wud any airline wanna gv this as kids gift.. it took hb a solid hr to finish it).. i suddenly remembered the mango and durian sticky rice that we had while in bkk.. so without delay.. i decided to try my hand on serimuka durian for the 2nd time..

It came out perfect.. the texture .. the sweetness.. Ohhhh la laaa... i ate and i ate till i felt like vomitting muahaha.. i gave half to mom and dad and they gobbled em up right away.. one thing for sure.. i know now where my durian fetish comes fm hehe




Ingredients
500g glutinous rice - soak for an hr with 1 tsp of alkaline water (i didnt use alkaline water)
1 tsp salt
340ml light coconut milk
screwpine/pandan leaves
1 tsp sugar (i added)

Method
1. Prepare the steamer. Combine glutinous rice, salt, sugar and coconut in a square or round cake pan. Mix well. Place the screwpine/pandan leaves on top of the rice and steam over rapidly boiling water for about 30–35 minutes or until cooked through.
2. Discard pandan leaves. Fluff up the rice, and then press rice firmly down with a banana leaf or aluminum foil until it is compact. Return it to the steamer.




Ingredients
Topping
300g durian flesh
250g sugar
6 eggs (abt 60g each)
60g flour (I added 10g more)
10g sago or corn flour (I used corn flour and added 10g more)
750ml thick coconut milk (i used KARA 350g and add 400ml water)
pinch of salt
a few drops of yellow colouring


Method
Puree durian flesh with 100ml of coconut milk taken fm 750ml of coconut milk - set aside.
Stir eggs and sugar until well combined. Add in sifted flour and slowly add the coconut milk (650ml).
Add in puree durian and continue to stir.
Strain the batter to remove any lumps.
Cook it over low heat till slightly warm... stirring it occasionally so as to avoid any lumpy batter..
Scratch the surface of the steam rice lightly with a fork... press em again and prick with fork. Pour in the batter on top of the rice. Steam over medium heat for an hour or until set.
Set it aside to cool completely before cutting into serving pieces.

Is it just me or everyone else in this planet is feeling all tired... my eyes get painful especially at night and if i am not careful .. i might be down with a bad cough.. already right now i can feel the pain in my throat..





Weird enough when we were in Bangkok.. there was no sign of haze and the moment we were abt to land at the changi airport.. i cud see the haziness surrounding Singapore island.. sigh.. if it gets worse.. its not gonna do anyone good.. i just hope that it will clear soon cos I cant afford to fall sick right now..


Anyway eventho I'm swamped with lots of housework and laundry.. I managed to put aside an hour tdy to bake this cakey aka cookie brownie.. some might call this blondies.. i simply call this brownie.. both my boys are soooo inlove with this brownie that Hairi ate 5 pcs at one time.. hb ate 10 in one sit and i seriously think that this is gonna be his next "to do on monthly basis" thang.. just like my famous amos cookies.. these congo bars are definitely his kind of brownies and to be honest.. this brownie shud be called magic bars instead cos really.. right after u take it out of ur oven.. this thing is like magic.. now u see em.. now u dont muahahhaa

Ingredients
2 3/4 cup all purpose flour
2 1/2 tsp baking powder
1/2 teaspoon salt
2/3 cup butter, softened - I used 150g Anchor brand butter
1 lb. light brown sugar (Oh my and thank you!) - I used 320g
3 eggs
1 tsp vanilla
11.5 ounce package milk chocolate chips - I used 250g chopped valrhona (55%)
1 cup chopped pecans (optional) - I didnt use.. dont feel like it




By mixer:

Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.

By hand:

Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.

Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.
Bake at 170C for 30 minutes or until top is golden brown. Make sure you don’t over bake!




Note: I baked it for 25 mins, 160C in my new pan that fits my silpat mat.. i am not too sure whats the size is and am too lazy to go to my pantry to check it out.. sorryyyyy

We got home at almost midnight.. the flight back home was not that good.. turbulence and the feeling was not good - nevertheless i am thankful that we got home safely..






My last couple of days in Bangkok were well spent.. after brekkie at the lounge.. i got to chill by the pool with my Sonia.. i got to rest well.... she did her first manicure and pedicure while in bkk and it was hilarious.. the way she sat looking at her nails.. the way she knew exactly what she wanted made me wonder if shes really 2 and half yrs old lol..







She wanted her nails painted for whatever reason.. i know she didnt learn it fm me cos i am not into that .. she probably saw it fm all the shops that do nails in MBK.. anyway at first she wanted her nails to be painted pink.. i got her nails painted pink.. then when we got back to our room she kept on wanting her nails to be painted green.. i was like.. green??






I finally gave in and took her to another shop the very next day where she got her nails painted green.. not just an ordinary green mind ya.. she specifically wanted them to be luminous green!






We then went back to our htl room and she quickly put on her bath robe and said.. "mama.. look.. my nails greennnnn.. like Ben 10" muahahahah.. so that was it.. that explained why she wanted her nails to be green... arghhhhh.. i hope her craze over Ben 10 will die soon cos really a girl = Ben 10?? hmmmm







Anyway yesterday bef our flight home.. we did get to walk around bkk by foot.. I loved it.. eversince i got to know hb.. i hv learned how to love "walking" muahahah... I realized after our Paris trip (oh wow its been 6yrs maybe more since i last stepped foot in Paris) that the only way i get to see the place and the only way to take good pics is by walking.. Not only do u get to see stuff which u cant possibly see if u take a cab.. u get to even shop in places which u cant possibly shop in if u hadnt walked in the first place.. :op

A trip to JT is a must this time around cos we needed to get a few stuff for mom as a gift and to our family friends in France..

Ijah of Arah.. shes one lovely woman i must say.. smiling and laughing.. just not like how i laugh tho.. i laugh like a witch hahahha..She came with her son who to me, looks more like a japanese boy than a malay boy.. Ika on the other hand speaks fluent japanese and at that very moment i felt that its abt time i make a little effort to learn how to speak german.. err after a decade i shud at least know how to converse well in german and not just the bad words.. right?? kahkahkah.

Anyways.. we had a great time chatting and hanging out and to put a face to a name is good stuff.. thank you Ijah for taking the time to go to our htl to meet us eventho u had a long day.. the gifts... ohhh u shudnt hv troubled urself nevertheless thank you for the thought.. let me know when u will be in JB and maybe we can meet half way?? hehhe.. take care dear!

On a different note.. both my sisters took the night flight out yesterday and the last minute shopping was hilarious at the same time troubling hahha.. i had to keep on reminding them that they hv to leave early to avoid the bad traffic to the airport.. we only got back to our hotel half an hr bef they were due to leave the hotel.. tsk tsk.. next time no more last minute shopping for u girls!! hahhaa

I on the other hand will start my laid back chilling mood with Sonia in this suite... ahhhh this is what u call weekend gateway with ur siblings.. u shop and shop.. u walk and walk.. u eat and u eat and u MUST hv the time to just chill and enjoy ur relaxing time in the land of smiles...

Sooo I am gonna leave u girls with some pics taken last weekend.. at JJ market.. our fav weekend market whenever we're here.. we are abt to go down n hv our brekkie and will do our last min shopping together bef they fly back home this evening :o(

What is a trip to JJ market without buying all sorts of rempah/spices.. I loveeeeee this tom yam paste! 1kg plssssssss ... oh oh do u remember the last time i was here?? my rempah got confiscated at the airport cos the paste was more than 150ml and cannot be handcarried to the plane.. :o( I am so gonna pack all my rempah and check it in this time around!

A super quick entry bef my wkend gateaway starts.. I baked this layer cake last night since i had to finish up a tray of eggs.. dont ask me which is the economic part abt this recipe cos I dont even know lol.. it uses 24 egg yolks and uses 500 odd grams of butter.. so really.. is this what u call lapis legit "economical" Pak Hadi Tuwendi?? hahahah





Anyway remember the lapis legit recipe that I hv which uses 800g of butter and 60 egg yolks?? well that recipe belongs to Pak Hadi too and bec this ones uses lesser (according to him yah) ingredients.. it is therefore called Lapis Legit Economis.. this cake itself is moist and not too oily, the sweetness is just right.. perfect!





Ingredients
(A)
75g caster sugar
175g margarine (cold)
300g Butter (cold) - I use Orchid brand
80g Hollman Butter (cold)
1/2 tsp vanilla extract
1/2 tsp yellow colouring (gel type)- I added
20g sweetened condensed milk
(I used a mixture of golden churn and wjsman butter and omit margarine)

(B)
450g egg yolks
50g sugar

(C)
300g Caster Sugar
350g Egg whites

(D)
50g Milk Powder
140g Flour
20gr corn flour
4 tbsp Spekuk mix - (I used 3 tbsp)

Pan 21X21X7 cm - (I used 8x8)


Method
Whisk B for 2 to 3 mins on high speed.. put aside.
In another bowl, whisk A for 12 mins on medium high speed. Once done add B into A a little at a time beating well with a low-speed. Once mixture B runs out, immediately off mixer.
Whisk ingredients C on medium speed until soft peak. Add to AB mixture.
Add in sifted ingredients D and stir well. (I used my mixer to mix it)
Bake it layer by layer (80g each layer.. 7mins) using upper fire (grill) at 175C..
Bake last layer using upper and lower fire for 10mins.
Done!





Okie.. got to run... got to get things done bef our flight.. hv a good weekend peeps and see u guys in Bangkok!

Bahan A:
80 gr gula halus
500 gr Margarine (dingin)
85 gr Hollman butter (dingin)
1/2 sdt Toffieco vanila flv
1/4 sdt Toffieco egg yellow fc
20 gr susu manis

Bahan B :
450 gr kuning telur ) Kocok 2 - 3 menit dengan whisking
60 gr Gula halus ) (pengocok kawat)

Bahan C :
330 gr gula pasir
400 gr Putih telur
2 gr cream of tar-tar

Bahan D :
60 gr susu bubuk full cream
170 gr Terigu
4 gr Bumbu spekkoek

1 Loyang persegi 22 x 22 cm, tinggi 8 cm.
Dipoles mentega dialasi kertas, dipoles mentega lagi.

Cara membuat :
1. A dikocok 12 menit dengan medium speed, masukkan B, kocok dengan low speed hingga kaku (12 menit), Begitu B habis segera berhenti.
2. C dikocok dengan medium speed hingga kaku (kira kira 12 menit)
campurkan dengan A dan B.
3. Masukkan D yang diayak jadi satu, aduk rata.
4. Panggang selapis demi selapis @ 85 gr, dengan api atas sampai adonan habis (25 lapis).

Weekend is approaching fast and I am so so looking forward to it.. we are flying to the Land of Smiles and this time around its not gonna be just another weekend in another country... both my sisters will be flying with us and will spend a few days there with us bef flying back home on Monday.. we will be staying there till friday since hb has to be there for work too... yayyyy.. its been more than a year since i get to go there.. am so so looking forward to meet my best buddy, Justin and Ping again.. so so looking forward to shop for house stuff and so so looking forward to just chill again.. it will be a one wild weekend.. hehhee when i say wild.. i didnt mean.. partyyyy.. we are too old for that kinda of stuff muahaha






So today since I am still munching on my orange cake.. I decided to go easy on my butter and think of a way to get rid of my strawberries and blueberries.. hmmm nooo.. I wasnt successful in getting rid of them but I managed to get rid of my milk in my fridge.. I probably will end up baking friands tmrw morning and will gv it to my mom so that she has some cakes for her grandkids to munch this wkend.. oh and since its pretty late now.. i will just type down the recipe in indon.. u guys click on my sidebar for the translation wokey :o))






Resep dari Inspirasi Usaha Boga - Kreasi Pudding


Ingredients
Pudding Mocca
400ml air
25g tepung maizena
7g agar agar bubuk putih
175g gula pasir
600ml susu full cream
2 sdm cokelat bubuk, larutkan dalam 60ml air panas

Pudding coffee
7g agar agar bubuk putih
700ml air
125g gula pasir
2sdm kopi bubuk instan

Saus
300ml susu
75g gula pasir
2 sdt tepung maizena, larutkan dengan sedikit air
2 kuning telur, kocok
1/2 sdt vanili bubuk
1-2 sdm rum, bila suka


Method
Puding moka
Campur air dan tepung maizena dalam panci, jerangkan di atas api, aduk hingga licin, campur agar agar, gula, kopi dan susu, aduk hingga agar agar larut, lalu tuang ke dalam panci adonan maizena. Aduk terus hingga mendidih, masukkan larutan cokelat, aduk rata, angkat. Rendam panci berisi air panas atau jerang di atas api paling kecil agar adonan tetap cair.

Puding kopi
Campur agar agar, air, gula dan kopi, aduk hingga gula larut, jerang kan di atas api. Aduk hingga gula larut dan mendidih, angkat. Rendam panci dalam air panas atau tetap jerangkan di atas api paling kecil agar adonan tetap cair.

Siapkan cetakan 18x18x5cm. Basahi dengan air matang. Tuang 100-150ml adonan puding moka ke dalam cetakan, ratakan, tunggu hingga adonan agak mengeras.

Tuang 100-150ml puding kopi di atasnya, ratakan, tunggu hingga adonan agak mengeras. Buat lapisan bergantian hingga adonan habis dan terbentuk puding yg berlapis lapis, sisihkan hingga mengeras

Saus
Masak susu dan gula hingga mendidih, masukkan larutan tepung maizena, aduk. Ambil 1 sendok adonan susu, masukkan ke dalam kuning telur kocok, aduk rata, masukkan kembali ke dalam panci susu. Tambahkan vanili, aduk, angkat, biarkan hingga agak dingin. Masukkan rum, aduk rata.

Keluarkan puding dari cetakan, potong potong, sajikan bersama sausnya.

Note: Aku sih ngak pake segala saus.. dimakan begitu pun enak kok...

And this hello kitty pudding is for my little princess.. she is so so into coffee that she ate not one kitty but two kitties in one go.. tsk tsk.. this is what happens when hb starts her young when it comes to coffee.. err not just any ordinary coffee yah.. she had her first taste aka hb dipped the back of the spoon into his last drop of espresso and let her lick the spoon when she was a year old :o( now whenever we hv our coffee she wants her baby chino (milk frothing) hehe

I must be a sucker when it comes to this cake that each time I see someone bake this cake .. I will hv the urge to bake it again.. not only to bake it.. but to keep it to myself and not share it with others muahahaha..

Ingredients
250g lightly salted butter, at room temperature, plus extra for greasing
250g caster sugar
4 medium eggs
1 1/2 tsp finely grated orange zest
250 g self raising flour
85 ml freshly squeezed orange juice

For the icing:
125 g icing sugar
5 tsp freshly squeezed orange juice





Method
- Preheat the oven to 170C. Grease and line a 22-cm clip-sided round cake with non-stick baking paper.
- Using an electric whisk, cream the butter and sugar together for 4-5 minutes until very pale. Beat in the eggs, one at a time, beating very well between each one, if necessary adding a spoonful of flour with the last egg to prevent the mixture from curdling. Beat in the orange zest. Add the flour all at once and mix in well, then slowly mix in the orange juice.
- Spoon the mixture into the prepared tin and bake on the middle shelf of the oven for 45-50 minutes or until a skewer, inserted into the centre of the cake, comes out clean. If it starts to brown too quickly, cover loosely with a sheet of lightly buttered foil.
- Leave the cake, in its tin, to cool on a wire rack, then carefully remove the sides and base of the tin and peel off the paper. Put it onto a serving plate.
- For the icing, sift the icing sugar into a bowl and stir in the orange juice until you have a spreadable consistency. Spread it over the top of the cake, letting it drip down the sides, and leave to set. Serve cut into slices, and store any leftovers in an airtight container.
