Sultana Cake



Fresh out of oven... i hv been thinking abt baking this cake since last week... finally i get to bake it today... simply love the taste and texture of sultana cake.. the aroma of butter is so overwhelming right now... cant wait to hv a slice! recipe is fm Alex Goh... by the way... i love all his recipe!!


Ingredients
280g butter
230g sugar
5 eggs
1tbsp Glycerine
200g flour
1/2tsp baking powder
1tbsp milk powder
250g sultanas (i use half sultanas...half cranberry)
60g high protein flour (use bread flour)


Sieve flour, baking powder and milk ... put aside
Mix sultana and high protein flour .. put aside

Method
1. Cream butter and sugar till light and fluffy
2. Add eggs and continue beating till smooth and light
3. Add glycerine and mix till well blended
4. Add sifted flour and mix using rubber spatula
5. Add sultanas mixture and pour batter into a greased loaf pan
6. Bake at preheated oven at 180C for 50 mins (i baked mine at 55mins)


NOTE: Overcreaming will cause the cake to sink as well as the sultanas to sink to the bottom. After baking for 15-20 mins, extra sultanas can be sprinkled on top of the cake for decoration. The glycerine is added to make the cake moist. If it is not available, it is fine to omit it.
