Fruit Pastry







Didnt wanna bake anything today as i still hv like 3 more slices of apple pie and 2 puff left in my fridge... but all that change when i bought a punnet of strawberries lol... reasons reasons Rima!

So ok i baked this fruit pastry practically on every occasion that we hv at our place... during bbq, bdays, even bake it during Eid... u name ur occasion i bake this fruit pastry hehehe... You could almost use any kind of fruits you can find in your fridge to make this fruit pastry.. strawberry, raspberry, peach, apricot, kiwi etc etc.. this fruit pastry is delicious and i promise u that u will never get tired of eating it...tks Vi for this great recipe!


Ingredients

11/2 cups (210g) flour
140g sugar (2tbs sugar for sprinkling on fruits)
3/4 stick (100g) butter
2 tablespoons (50g) sour cream
1tsp baking powder
1tsp vanilla
1tsp lemon or orange peel (tried both.. prefer lemon tho)
3 eggs

500g fruits (apricots, peaches, pears, cherries, plums, orange, pineapple, or any other fruit not too juicy)

In a strainer place the prepared fruits (pit removed and cut in not too big pieces) sprinkle them with 2 tablespoons of sugar. Preheat oven to 350 F (180 C).

Method
Beat butter, sour cream and sugar together.
Add eggs one at a time. Add flavorings. Flour and baking powder and mix until everything is smooth
Butter and flour a baking pan (18x27 cm or 7x11 inch). A round 9 inch will do the same. Place batter in the pan and level nice
Place fruits on top (don’t press). Bake for 60-70 mins. I bake mine 55 mins. But that depends on your oven. Let cool on a rack and sprinkle with sugar if u like…
